Ingredients
  

For the cookies

  • 180 g all-purpose flour (1 1/2 cups)
  • 30 g instant espresso powder (2 tbsp)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 113 g unsalted butter, softened (1/2 cup)
  • 100 g granulated sugar (1/2 cup)
  • 50 g brown sugar (1/4 cup)
  • 1 egg room temp.
  • 1/2 tsp vanilla extract

For the mascarpone frosting

  • 200 g mascarpone, softened (3/4 cup)
  • 100 ml heavy cream (1/4 cup + 2.5 tbsp)
  • 50 g powdered sugar (1/4 cup)
  • 1/2 tsp vanilla extract

Additional ingredients

  • 15 g cocoa podwer 2 tbsp

Instructions
 

  • Prepare the Dry Ingredients: Sift together the all-purpose flour, espresso powder, baking soda, baking powder, and salt in a medium bowl. Mix and set aside.
  • Make the Cookie Dough: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until creamy, about 2 minutes.
  • Add the egg and vanilla extract, then beat until fully incorporated.
  • Add the dry ingredient mixture to the butter mixture, stirring with a spatula until fully combined.
  • Chill the Dough: Cover and chill the dough in the refrigerator for 30 minutes.
  • Bake the Cookies: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper. Use a 1.5 to 2-tablespoon cookie scoop to portion out the chilled dough, spacing them 1-2 inches apart.
  • Bake in the center of the oven (no fan) for 12-15 minutes.
  • Flatten the Cookies: Immediately after baking, use the flat bottom of a clean bowl or glass to gently press down on each cookie, creating a flat surface for the frosting.
