About This Recipe

Making pumpkin bread is incredibly easy, making it the perfect baking project for both beginners and seasoned bakers alike. With no need for an electric mixer, this recipe is as simple as whisking together the dry ingredients, mixing the wet ingredients, and combining the two. It’s a no-fuss way to enjoy a homemade treat that fills your kitchen with the comforting aroma of warm spices and pumpkin. Plus, since it’s made with basic pantry staples like flour, sugar, eggs, and canned pumpkin puree, (you could also use homemade pumpkin puree, which I have tried and is delicious!) you won’t need any fancy ingredients to whip up this delicious loaf.

Pumpkin bread isn’t just a must-try during autumn because of its cozy flavors—it also comes with some great health benefits. Pumpkin is rich in vitamins A and C, which support the immune system, and it’s a good source of fiber, which helps keep you full and satisfied. The warm spices, like cinnamon and nutmeg, complement the natural sweetness of pumpkin, creating a perfectly balanced and moist loaf that you’ll want to make again and again.

If you’re looking for an easy, crowd-pleasing recipe that brings the essence of fall to your table, pumpkin bread is the way to go. Whether you’re enjoying a slice with your morning coffee or as a dessert after dinner, it’s the kind of treat that makes any day feel a little more special.

What You Need To Make This Recipe

Flour: Provides structure to the bread. All-purpose flour is used for a tender crumb. You can use whole wheat flour for a heartier texture or a gluten-free flour blend for a gluten-free option.

Baking soda and baking powder: Acts as a leavening agent to help the bread rise, making it light and fluffy.

Salt: Enhances the flavor and balances the sweetness.

Spices: Adds a hint of warmth and spice, enhancing the fall flavors.

Vegetable oil: Adds moisture to the bread, keeping it soft and tender. Melted butter, coconut oil, or applesauce can be used in the same amount.

Granulated sugar: Sweetens the bread and contributes to the overall texture.

Brown sugar: Adds sweetness and moisture, along with a slight molasses flavor.

Eggs: Bind the ingredients together and help the bread rise. Use flax eggs (1 tablespoon ground flaxseed mixed with 3 tablespoons water per egg) for a vegan option.

Vanilla extract: Enhances the overall flavor and adds depth.

Pumpkin puree: Adds moisture, flavor, and a tender texture to the bread.

Milk: Adds moisture and helps create a tender crumb. It can be substituted with any plant-based milk (almond, oat, soy) and can be used in the same amount.

Optional Ingredients: I topped my pumpkin bread with a simple spiced glaze, made with powdered sugar, ground cinnamon, ground ginger, and some milk.

How To Store Pumpkin Bread

To properly store pumpkin bread and keep it fresh, follow these steps:

  1. Cool Completely
  • Allow the pumpkin bread to cool completely before storing it to prevent condensation and sogginess.
  1. Wrap It Well
  • Wrap the bread tightly in plastic wrap, aluminum foil, or place it in an airtight container to keep it moist and prevent it from drying out.
  1. Store at Room Temperature
  • Pumpkin bread can be stored at room temperature for up to 3 days. Keep it in a cool, dry place away from direct sunlight.
  1. Refrigeration (Optional)
  • For longer storage (up to a week), refrigerate the bread. Make sure it is tightly wrapped to avoid drying out in the fridge.
  1. Freezing for Extended Storage
  • If you want to keep the bread for a longer period, you can freeze it. Wrap it in plastic wrap, then place it in a freezer-safe bag or container.
  • Freeze for up to 3 months. When ready to enjoy, thaw it overnight in the refrigerator or for a few hours at room temperature.

Following these steps will help maintain the moisture and deliciousness of your pumpkin bread!

Pro Tips

  • Use Pure Pumpkin Puree: Make sure to use pure pumpkin puree, not pumpkin pie filling, which contains added sugar and spices.
  • Don’t Overmix the Batter: Mix just until the ingredients are combined. Overmixing can lead to a dense, tough loaf instead of a light, tender crumb.
  • Measure Flour Correctly: Spoon flour into the measuring cup and level it off with a knife. Avoid scooping directly from the bag, as this can pack in too much flour and make the bread dry.
  • Use Room Temperature Ingredients: Bring the eggs and milk to room temperature before mixing. This helps create a smoother batter and allows for even baking.
  • Add Extra Spice: If you love a stronger spice flavor, increase the cinnamon, nutmeg, or ginger for a bolder taste.
  • Check for Doneness with a Toothpick: Insert a toothpick into the center of the bread; it should come out clean or with just a few moist crumbs. If it’s still wet, bake a little longer.
  • Avoid Opening the Oven Too Often: Opening the oven door repeatedly can cause the bread to sink in the middle. Wait until it’s almost done before checking.
  • Cool Completely Before Slicing: Allow the bread to cool in the pan for 10-15 minutes, then transfer it to a wire rack. Let it cool completely before slicing to avoid crumbling.
  • Add Mix-Ins for Extra Flavor: Stir in chocolate chips, nuts, or dried fruit to the batter for added texture and flavor.
  • Store Properly for Freshness: Wrap the cooled bread in plastic wrap or foil and store it in an airtight container to keep it moist and delicious.

FAQ’s

Can I use fresh pumpkin instead of canned pumpkin puree?

Yes, you can use fresh pumpkin puree. Roast or steam the pumpkin, then blend it until smooth. Make sure to drain excess liquid for the same consistency as canned puree.

Why is my pumpkin bread dry?

It could be due to overbaking or using too much flour. Make sure to measure the flour correctly (spoon and level method) and check for doneness early.

Can I add nuts or chocolate chips?

Absolutely! You can stir in nuts, chocolate chips, dried cranberries, or even raisins for extra flavor and texture.

Why did my pumpkin bread sink in the middle?

This can happen if the batter is overmixed, if the oven temperature is too high, or if the bread was taken out of the oven too early. Make sure to bake until a toothpick inserted in the center comes out clean.

How long can I store pumpkin bread?

Pumpkin bread can be stored at room temperature for up to 3 days, in the refrigerator for up to a week, or in the freezer for up to 3 months.

Can I make pumpkin bread gluten-free?

Yes, you can use a 1:1 gluten-free flour blend. The texture may vary slightly, but it should still be moist and delicious.

Can I use pumpkin pie filling instead of pumpkin puree?

No, pumpkin pie filling has added sugar and spices, which will affect the flavor and consistency of the bread. Use pure pumpkin puree for best results.

How do I prevent the bread from sticking to the pan?

Grease the pan well or line it with parchment paper for easy removal.

Can I use another type of oil or butter instead of vegetable oil?

Yes, you can substitute melted coconut oil, olive oil, or even melted butter for a different flavor profile.

Instructions

  1. Preheat your oven to  350°F (180°C) and grease and line a 9×5-inch loaf pan with parchment paper.
