About The Recipe

This no bake hazelnut chocolate crunch recipe is perfect for when you want to whip up something quick, but gourmet. It requires no baking and only a few simple ingredients, and the result is mind blowing! I am not joking when I say I could eat all of these by myself.

The recipe has two main components, the crunchy hazelnut base and a layer of dark chocolate smothered on top. I also added an additional layer of caramel in between but that’s totally optional. What I love most about this recipe is that it require no baking/cooking skills at all, and does not have to look perfect.

The combination of chocolate and hazelnuts is to die for! The nutty and buttery flavor of hazelnuts combined with the rich and creaminess of dark chocolate, creates a masterpiece!

What You Need To Make This Recipe

Hazelnuts: I used roasted hazelnuts, but you can also use peanuts for this recipe.

Chocolate: dark chocolate is my favorited so that’s what I used, but milk chocolate will work just as fine.

The remaining ingredients are needed to make the caramel which is combined with the hazelnuts to give the chocolate hazelnut crunch their crunch!

How To Make Chocolate Hazelnut Crunch

Step 1: using a food processor, chop the roasted hazelnuts very finely, but not too much that it turns into a powder. See pic below. Then transfer them into a large bowl.

Step 2: In a small saucepan, melt the sugar on medium-low without stirring, once about half of the sugar is melted you can stir using a spatula if needed. Then add in the butter and mix until combined. Be very careful at this stage, because the caramel tends to bubble and produce steam.

Step 3: Pour the caramel into the roasted hazelnut and mix until fully incorporated.

Step 4: Transfer the mixture into a 6 x 6 (square) tray lined with baking paper, spread it out and press down using a spatula. You want to work quickly because the caramel starts to harden very fast. Refrigerate for 15 minutes.

Step 5: This step is optional, once chilled I like to add a layer of my salted caramel sauce, just 3-4 tablespoons. Then chill for another 10 minutes before adding on the chocolate.

Step 6: Spread on melted dark chocolate and set in the refrigerator for 1 hour. Once set, cut it up however you like and enjoy!

Storing The Chocolate Hazelnut Crunch

Store any leftovers, in an air-tight container, and refrigerate for up to a week. To freeze, store them in a freezer safe bag and freeze for up to 2 months.

Pro Tips

  • Don’t like hazelnuts? No problem this recipe work great with peanuts, just follow the exact same step as written in the recipe but with peanuts instead of hazelnuts!
  • Make these ahead of time, and store in the refrigerator, so you have them on hand whenever you’re craving something sweet!
  • The hazelnuts can also be chopped by hand, just make sure you chop them very finely.
  • If your hazelnuts aren’t already roasted, just dry roast them in a pan on medium-high for 3-4 minutes. Just make sure to stir them from time to time so they don’t burn.
  • Use any shape of pan or tray, it really doesn’t matter just make sure it’s not too big or your chocolate hazelnut crunch will be too thin. (6×6 pan is best)
  • If you want a thicker layer of chocolate, you could definitely use more than I did.

FAQ’s

Can I make these with milk chocolate?

Of course, dark chocolate is just my personal favorite, but I do think that the bitterness helps to balance out the sweetness of the dessert.

Can I use store-bought caramel for the middle?

Yes, any store bought salted caramel sauce will work just as fine.

Ingredients

  • 1 1/4 cup hazelnuts, roasted
  • 1/2 cup granulated sugar (100g)
  • 2 tbsp unsalted butter (30g)
  • 1/2 tsp salt
  • 120g dark chocolate (~4.oz)

Instructions

  1. Line a 6×6 square tray with parchment paper and set aside.
  2. Chop up the roasted hazelnuts very finely using a food processor. Do not turn it into a powder. Transfer into a large bowl, and set aside.
  3. In a saucepan melt the sugar on medium-low without stirring. Once fully melted add in the butter and mix until combined. Lastly add in the salt and simmer for 2 minutes.
  4. Pour the caramel on to the hazelnuts and quickly mix until combined. Transfer the mixture into the prepared pan and spread it out, press down using the spatula until leveled and flat. Refrigerate for 15 minutes.
  5. Once chilled,(optional) spread on the salted caramel sauce and chill for another 10 minutes. In the mean time melt your chocolate in a microwave in 30 second increments, making sure to stir in between. (or use a double boiler )
  6. Spread on the melted chocolate using an offset spatula and chill for 1 hour so the chocolate can set completely.
  7. Cut it up and enjoy!
